Sauté aromatics
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until soft and fragrant.
Simmer tomatoes & broth
Add the canned tomatoes with their juices and the broth. Bring to a gentle simmer for 15 minutes.
Blend smooth
Blend the soup with an immersion blender until completely smooth.
Add cream & basil
Stir in the heavy cream and fresh basil. Heat through for another 2 minutes.
Season & serve
Season with salt and pepper, then serve hot with a side of crusty bread.
