Melt the butter in a non-stick pan over low heat. Add the chopped kadayif and toast until deeply golden and crunchy, about 8-10 minutes.
Melt two-thirds of the chocolate in a double boiler. Off the heat, stir in the remaining third until smooth.
Coat the chocolate mold with a thin layer of melted chocolate, tilting to cover the sides and corners. Chill until set.
In a mixing bowl, combine the pistachio cream, tahini, salt, and toasted kadayif until well incorporated.
Fill the chocolate-lined molds three-quarters of the way with the pistachio mixture.
Pour the remaining melted chocolate over the filling to seal the bars, smoothing with an offset spatula. Chill until completely firm.
