Preheat the oven to 350°F (175°C). Prepare two 8-inch round cake pans by buttering, lining with parchment, and flouring them.
Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into a mixer bowl. Mix on low until combined.
In a separate bowl, whisk the buttermilk, oil, eggs, and vanilla. With the mixer on low, slowly add the wet mixture to the dry ingredients.
Add the hot coffee to the batter and stir just to combine.
Pour the batter into the pans and bake for 35-40 minutes, until a tester comes out clean. Cool completely.
Melt the chocolate over simmering water and let it cool.
Beat the butter until fluffy. Add the egg yolk and vanilla, then gradually beat in the confectioners' sugar.
Dissolve the instant coffee in 2 tsp hot water. Blend it into the butter mixture along with the cooled melted chocolate.
Frost the cooled cake layers generously and serve.
